Instructions
Oven 180°C / 355°F · 9 inch (23cm) round baking dish

Whisk the warm milk, yeast and 1 teaspoon sweetener; rest 5 minutes until foamy.

Mix in the egg, 1/4 cup yogurt, flour and salt, then knead 6-8 minutes until smooth and slightly tacky.

Cover and let rise in a warm place for 45-60 minutes, until almost doubled.

Roll into a 12x9 inch rectangle, brush with butter and sprinkle with the remaining sweetener and cinnamon.

Roll up from a long edge, cut into 8 pieces and arrange in the lined dish. Rest 15 minutes while the oven heats.

Bake 20-24 minutes until golden and set in the centre.

Whisk the remaining yogurt with powdered allulose and vanilla, then spread over the rolls while just warm.
Doneness test
The centre roll reaches 88-91°C / 190-195°F and springs back when lightly pressed.
Cooling
Rest for 10 minutes before glazing so the icing softens without disappearing into the rolls.
