Instructions

Oven 175°C / 350°F · 9x5 inch (23x13cm) loaf pan, parchment lined

    Heat the oven to 175°C / 350°F and line the loaf pan with parchment.

    Rub the lemon zest into the allulose, then whisk in the eggs, 1/2 cup yogurt, oil and 2 tablespoons lemon juice.

    Whisk the flours, baking powder and baking soda separately, then fold into the wet mixture just until combined.

    Fold in three-quarters of the raspberries and spoon into the pan. Scatter the rest on top.
