Instructions
Oven 180°C / 355°F · 8 inch (20cm) baking dish
- 1
Heat the oven to 180°C / 355°F and lightly coat the baking dish.
- 2
Whisk almond milk, banana, half the sweetener, vanilla and cinnamon.
- 3
Stir in oats and baking powder, then spread into the dish and arrange apples on top.
- 4
Bake 25-30 minutes until the centre is set and apples are tender.
- 5
Warm the remaining sweetener with miso, almond butter and 2 tablespoons water until glossy.
- 6
Drizzle the miso caramel over the warm oats and rest 5 minutes.
Doneness test
The centre springs back lightly and a knife slides easily through the apples.
Cooling
Rest 5 minutes for soft scoops or cool fully for neat breakfast squares.
Smart substitutions
Banana for oil
Binds and sweetens the oats naturally.
Texture: Soft, pudding-like centre with crisp edges.
White miso for extra salt
Creates a rounded salted-caramel flavor.
Texture: No structural change; only deeper flavor.
Pro baking tips
- Use white miso, which is gentler than red miso.
- Slice apples thinly so they soften before the oats dry.
Make it even lighter
Swap an ingredient for a lower-calorie one, use less of it, or skip it altogether — with an honest note on what it does to the taste.
