Instructions
Oven 190°C / 375°F · One 300ml ramekin
- 1
Heat the oven to 190°C / 375°F and lightly coat the ramekin.
- 2
Blend or mash the banana, egg, cacao, baking powder, vanilla and salt until very smooth.
- 3
Pour into the ramekin and scatter chocolate chips over the top.
- 4
Bake 12-15 minutes until risen and just set at the edges.
- 5
Rest 2 minutes and eat warm from the ramekin.
Doneness test
The edges are set and puffed while the centre still gives a gentle wobble.
Cooling
Rest only 2 minutes; like any soufflé, it is best warm and will settle naturally.
Smart substitutions
Banana for flour and sugar
Provides sweetness, body and moisture in one ingredient.
Texture: Soft and custardy rather than cake-like.
Omit chocolate chips
Saves about 45 calories when an even lighter dessert is wanted.
Texture: Less melty and rich, with more prominent banana-cacao flavor.
Pro baking tips
- Blend for extra lift and an even crumb.
- Use a truly ripe, heavily spotted banana for sweetness.
Make it even lighter
Swap an ingredient for a lower-calorie one, use less of it, or skip it altogether — with an honest note on what it does to the taste.
