Oven 175°C / 350°F · 8x4 inch (20x10cm) loaf pan, parchment lined

Heat the oven to 175°C / 350°F and line a small loaf pan with parchment — no greasing, since there is no fat in the batter to worry about sticking.

Mash the bananas to a smooth purée; lumps turn into wet pockets in such a lean batter.

Whisk in the whole eggs, egg whites and honey until completely smooth and slightly frothy.

Stir in the oat flour, cinnamon, baking soda and salt. Mix only until combined — 20 seconds is enough.

Pour into the pan, scatter the chocolate chips over the surface so they stay visible instead of sinking.

Bake 38-45 minutes. The loaf rises tall, then settles slightly as it cools; that is normal with no fat and this much fruit.
